Interior of St George's Distillery
In this small distillery three stages in the production of malt whisky take place in the same room. In the foreground is the mash tun where malted barley is fermented. Its capacity is one tonne. Behind are two copper pot stills, of different form to suit their distinct purposes. In the left-hand still the fermented mash undergoes its first distillation to produce a rough liquor known as "low wines", which would be most unpleasant to drink! To the right is the spirit still where the low wines are distilled again to give the refined spirit ready for casking.
