Spirit still at St George's Distillery
The second stage of distillation takes place in this slender-necked copper still, capacity 1800 litres. The refined spirit must then be matured in oak casks, previously used for bourbon, for a minimum of three years (sometimes much longer) before it can be bottled and sold as whisky. During this time complex reactions take place and the product slowly acquires its rich flavour and colour.
