Sweetbreads used to be a popular and nutritious form of offal which are seldom seen now. This Cardigan butcher has no qualms about displaying them and indeed they have come back into popularity in recent years. They consist of pancreas and/or thyroid glands (by the shape these are the latter)and can be cooked in a number of ways.
