"The coal being thus at hand, they make very good salt at almost all the towns upon the shore of the Firth; as at Seton, Cockenzie, Prestonpans, and several others, too many to name. They have a very great trade for this salt to Norway, Hamburg, Bremen, and the Baltic; and the number of ships loaded here yearly with salt is very considerable; nay, the Dutch and the Bremers in particular, come hither on purpose to load salt, as they do on the opposite side of the Firth also, viz. the shore of Fife." -- Daniel Defoe, A Tour Thro' The Whole Island of Great Britain (c.1716)
