The hedgerows are fresh green with Alexanders (Smyrnium olusatrum), an introduced biennial. "The whole plant may be eaten" says Roger Phillips*; "the leaves to make a white sauce or as a herb, the soft stems cooked as asparagus, the roots as a substitute for parsnips and the flower buds in salads."
