The oyster shed on Mersea provides “Colchester Natives”, a local delicacy since at least Roman times. The oysters, once dredged from the oyster beds, are kept for a time in tanks containing seawater sterilised by ultra-violet light; this helps to reduce the chances of food poisoning.
