Hogweed (Heracleum sphondylium) - flowers
Hogweed is one of the most common species in the carrot family and abundant in hedgerows, roadside verges, waste grounds and rough grasslands after the cow parsley is starting to dwindle. Young hogweed shoots can be eaten and are said to taste a bit similar to asparagus and parsley. Care must however be taken when harvesting due to chemicals contained in the sap which can cause phytophotodermititus – especially in strong sunlight – leading to skin burns. As the plant matures, the sap becomes increasingly phytophototoxic.
