In the centre of the picture is an oscillating sieve or jog scry that sieves the meal from the stones to separate some of the bran and make 85% flour rather than wholemeal. The mill can also produce wholemeal. The mechanism on the left hand edge includes a handle that is used to adjust the tentering beam to control the fineness of the grinding. This mill is working commercially and several outlets in Cumbria were selling Little Salkeld flour.
