Razor clams in the Covered Market
These molluscs (of the species Ensis) can be found in the intertidal zone but are now farmed sustainably in Scotland and other places. They are popular in Spain and can be cooked just like mussels. They are named for the shell's resemblance to a cut-throat razor.
