Sign for the Recruiting Sergeant, Horstead
The Recruiting Sergeant was the man who would tour the country, setting up an office at a tavern, and induce local men to join the ranks of the arm. The men bound themselves by accepting the King's/Queen's shilling. Unscrupulous Sergeants dropped a shilling into a pint of beer, which they offered to a man. When the drinker emptied his glass and the coin became visible he would take it out, only to find that he had then accepted the shilling.
