Using these special 4 ˝ Gallon glass ended casks the brain’s brewers can see if the essential secondary fermentation has stopped and the finings have cleared the beer properly. When this has happened the beer is said to have “dropped bright” and is ready for drinking. Most of the ale will have been run off into in 9 Gallon Casks and will have been sent to the
