This is one of three surviving icehouses in Berwick (the others are behind Ravensdowne, and near Shoregate)- they are all about 200 years old. Tweed Salmon was packed in ice before shipped south. The ice was collected from local ponds, and if properly-stored, could remain frozen for up to two years. In milder winters, ice would have to be purchased from Scandinavia.
