The speed of this aircraft combined with the tight turn it was pulling and the damp atmosphere came together to generate this effect. I know precious little about physics but I suspect that there was a rapid decrease in air pressure above the wing and all the latent water vapour condensed in the same instant. I could be completely wrong of course.
