The Sun is an ancient sign with pagan rather than Christian origins. The Sun and the Moon were representations of Apollo and Diana, popular also because there were easy to portray and recognize. The Sun continued its popularity as a pub sign because it became the badge of Edward III. Of course, the sun is also the source of light for the world as well as heat and life itself so no wonder that it is popular as a pub sign.
