Sea kale growing on the beach at Cuckmere Haven
This photo shows sea kale (Crambe maritima) growing on the beach at Cuckmere Haven. As a halophyte, sea kale can grow in saline conditions. It is a pioneer plant with specialist adaptions such as thick waxy leaves to prevent water loss and a glaucous colour which helps to reflect sunlight and prevent sunburn.
Sea kale was a popular vegetable in Victorian times and was served at the Prince Regent's Royal Pavilion in Brighton. Sea kale is protected under the Wildlife and Countryside Act of 1981.
