Salt marsh lamb is sold locally in Wigtown and Newton Stewart and has quite a different unique taste, much sweeter than normal lamb and very tasty. The lambs are usually placed here when old enough to graze outdoors. A keen eye on the weather is always an important aspect of good husbandry and livestock management, especially so when using the marshes by the Cree which are prone to flooding during high tides and floods. Farmers in recent years have lost stock in this part of the world when the river takes them out in to Wigtown Bay because of rapid flash floods and no time to move the herd.
