St. George's mushrooms (Calocybe gambosa) appear in spring between April and June - St. George's Day is on 23rd April. They are usually found in grassland and quite often on road verges. They are good to eat and are popular in the Basque country where it is called 'perretxiko', but great care should be taken as they resemble some poisonous species quite closely. It is a widespread species in the UK, mainly in England.
