Parsley is a culinary and medicinal herb native to the Mediterranean region, and one of the functional foods for its unique antioxidants and disease preventing properties. The Swedish botanist, physician, and zoologist Carl Linnaeus stated its wild habitat to be Sardinia. It was brought to England and apparently first cultivated here in 1548 and it has since been completely naturalised in various parts of England and Scotland. It is widely used in Mediterranean, East European, and American cuisine. Parsley is also known for its medicinal properties. Parsley Tea can be made from the two-year-old roots or from the dried leaves. An oil called Apiol can be extracted from the seeds.
