Fat hen (Chenopodium album)
Fat hen (Chenopodium album)
This plant can commonly be found growing on waste or recently disturbed ground, in hedgerows and on roadside verges, as well as on cultivated land and in gardens. The seeds as well as the flowers are edible. Fat hen is high in vitamin A, calcium, potassium, and phosphorus and is a good source of protein, trace minerals, B-complex vitamins, vitamin C, iron, and fibre. In former times, the leaves were used as a poultice to soothe burns.
