Originally the site of a Saxon fortress, the walls, towers and keep were built during the 12th and 13th Centuries by the de Redvers family, having been granted Henry I to Baldwin de Redvers in 1100 by Henry I. The great hall and other buildings ere added in the 13th Century by was added by the last of the de Redvers, Countess Isabella de Fortibus. The Countess subsequently sold the castle to King Edward I in 1293 since when it has remained a Crown property. The hall was remodelled in the late 14th Century and the main gateway was added in the 15th Century. Further remodelling took place in the late 16th Century by George Carey, cousin of Elizabeth I, who was also responsible for the outer ramparts, including the addition of 5 bastions.

From 1647-8 Charles I was held prisoner here.
